INGREDIENTS:
2 cups fresh spinach leaves
1 cup sliced mushrooms
2 cloves garlic, minced
1 tablespoon soy sauce (or tamari for gluten-free option)
1 tablespoon sesame oil
1 teaspoon sesame seeds (optional)
INSTRUCTIONS:
In a large skillet or wok, heat sesame oil over medium heat. Add the minced garlic and sliced mushrooms. Sauté for a few minutes until mushrooms are tender.
Add the fresh spinach leaves and soy sauce to the skillet. Stir-fry for an additional 2-3 minutes until the spinach wilts.
Sprinkle with sesame seeds before serving.
